Shrimp Scampi w Zoodles & Macadamia Oil ( Keto, Paleo, Gluten-free)

This low-carb version of classic shrimp scampi, will leave you feeling satisfied while also boosting your health, deliciously. 

Makes: 2 servings 

INGREDIENTS

  • 2 tbsp Jindilli Farms Macadamia Oil
  • 1 tbsp grass-fed butter (optional for enhanced flavor)
  • 2 garlic clove, minced
  • 16–20 raw shrimp (peeled and deveined)
  • 2 small zucchini, spiralized into zoodles
  • Juice of 1 lemon
  • Salt, pepper, and parsley to taste
  • Optional: pinch of red chili flakes

DIRECTIONS

  1. Heat macadamia oil (and butter if using) in a skillet.
  2. Add garlic and sauté for 30 seconds.
  3. Add shrimp, cook 2–3 minutes per side until pink and opaque.
  4. Add lemon juice, salt, and chili flakes.
  5. Toss in zoodles and cook for 1–2 more minutes until slightly softened.
  6. Serve hot, garnished with parsley and a light macadamia oil drizzle.

STORAGE

Store in airtight container and refrigerate after use.
