This simple side is elevated by the buttery mouthfeel of the Macadamia Oil, creating a super creamy take on the classic potato mash.
Makes: 1 serving
INGREDIENTS
- 2 tbsp Jindilli Farms Macadamia Oil
- 1 small head cauliflower, chopped
- 2 tbsp full-fat cream cheese (or coconut cream for dairy-free)
- 1 garlic clove (roasted or sautéed)
- Salt and pepper to taste
- Chives or green onions for garnish
DIRECTIONS
- Steam cauliflower florets until fork-tender (about 8–10 min).
- Place in towel or paper towel and squeeze to remove excess water.
- Add steamed cauliflower, macadamia oil, cream cheese, garlic, salt & pepper to blender or food processor.
- Blend until smooth and creamy.
- Taste and adjust seasoning.
- Serve warm with a swirl of macadamia oil and garnish with chopped chives.
