Crispy Parmesan-Crusted Roasted Potatoes & Garlic Aioli Dipping Sauce

These crispy parmesan fingerling potatoes are roasted until perfectly golden with a cheesy, crunchy crust, paired with a creamy roasted garlic aioli made with our cold-pressed macadamia oil. Crispy on the outside, buttery on the inside, and packed with rich, savory flavor, they're the side dish you'll keep coming back to.

Ingredients

Potatoes

• ⅔ cup Jindilli Farms Cold-Pressed Macadamia Oil
• 1 lb fingerling potatoes
• ¼ cup chopped parsley
• 1 cup grated parmesan cheese
• Salt, pepper, crushed red pepper, and parsley to taste
• Optional: Italian & Cajun seasonings

Macadamia Garlic Aioli

• 3 tbsp Jindilli Farms Cold-Pressed Macadamia Oil
• 1–2 garlic heads
• 1 tbsp ground mustard
• ½ cup mayo
• ¼ cup Kewpie mayo
• Salt & pepper to taste
• Lemon juice to taste

Directions

Potatoes

  1. Clean & cut each potato in half.
  2. Combine ⅔ cup Macadamia Oil, chopped parsley, and all seasonings in a large bowl and whisk together.
  3. Mix in ½ cup grated parmesan cheese and toss potatoes in mixture until fully coated.
  4. Prepare a small bowl with ½ cup grated parmesan, drag each potato along its halved side in cheese, and place on baking tray cheese-side down.
  5. Roast potatoes in a preheated oven set to 375 degrees for around 40 minutes, or until crispy and golden brown.
  6. Remove potatoes from oven, plate, and garnish with more parsley and parmesan to your liking.
  7. Enjoy with our Macadamia Garlic Aioli!

Macadamia Garlic Aioli — makes 1½ cups

  1. Drizzle 1 tbsp of Macadamia Oil over each garlic head, wrap in foil, and roast in the oven at 500 degrees for around 25–30 minutes.
  2. Once roasted, remove garlic cloves and mash into a paste-like consistency in a small bowl.
  3. Mix ground mustard, salt, and pepper in with the garlic paste.
  4. Add in ¾ cup of mayo.
  5. Add in 1 tbsp of Macadamia Oil.
  6. Spoon mixture into a blending or emulsifying device.
  7. Add lemon juice to your liking.
  8. Combine mixture until it reaches desired consistency.

Storage

Store leftovers in an airtight container and refrigerate.
